Perkozy najlepiej czują się w wodzie, można wręcz powiedzieć, że są to ptaki wyłącznie wodne. Ich nogi w drodze ewolucji przesunęły się ku tyłowi ciała, przez co po lądzie poruszają się bardzo niezdarnie, chwiejąc się na boki. Ich nogi mają dodatkowo płatkowate rozszerzenia na palcach, będące odpowiednikiem błony pławnej. Dzięki tym przystosowaniom perkozy doskonale pływają i nurkują, a pod wodą do napędu używają jedynie siły nóg. Perkozy długim ostrym dziobem łowi małe ryby, owady, mięczaki, skorupiaki i płazy. Po złapaniu rybki perkoz zazwyczaj utrzymuje swoją ofiarę w okolicy skrzeli, a jej ogon swobodnie zwisa. Jest to charakterystyczny chwyt dla ptaków które nie mają w dziobie zębów, wyrostków czy innych haczykowatych tworów, którymi potrafiłyby utrzymać swoje ofiary. Dziób blokowany jest o skrzela dzięki czemu ryba się nie wyślizguje, a ptak nie musi połykać ofiary w pośpiechu.
