Chilijskie wina powinny zadowolić każdego, ale co najmniej warta spróbowania jest bardzo mocna winna wódka (pisco), podawana często z sokiem cytrynowym, białkiem i cukrem pudrem jako pisco sour. Rzadziej serwuje się ją z napojem imbirowym jako chilcano lub wermutem jako capitán. Obszary uprawy winorośli rozciągają się od Copiapó na Małej Północy aż po Bío Bío. Duża liczba odmian oraz zróżnicowanie ukształtowania powierzchni decydują o ogromnej różnorodności gatunków wina. Winnice z regionu Atacama specjalizują się w produkcji pisco, ale wytwarzają też niewielkie ilości win białych i musujących. Obszar zwany zona de regadío (strefa nawadniania), leżący w środkowym Chile, produkuje głównie cabernet i inne wina czerwone, ale teren przeznaczony pod uprawę winorośli wciąż się powiększa. W strefie przejściowej Maule wina czerwone ustępują białym, a w dorzeczu Bío Bío wionorośl uprawia się od niedawna. Dalej na południe jest to już przedsięwzięcie zbyt ryzykowne.
