butelki białego wytrawnego wina, 1 łyżeczka pieprzu w ziarnach, szczypta pieprzu cayenne, 10 dag masła, 1 l wody, 2 l mleka, sól do smaku 1. Raki szorujemy szczoteczką i dokładnie płuczemy. 2. Cebulę i szalotki obieramy i kroimy w cienkie plasterki. Podsmażamy na połowie masła, dodając zmiażdżone ząbki czosnku, posiekany tymianek, listek laurowy i pieprz w ziarnach. Obieramy marchewkę. Wino i wodę dolewamy do cebuli. Wrzucamy marchew i gotujemy razem ok. 20 min. Pod koniec gotowania dodajemy posiekany koperek. 3. Zagotowujemy mleko z dodatkiem soli, wrzucamy pojedynczo raki, przykrywamy garnek i zagotowujemy. Następnie wylewamy mleko i płuczemy raki w ciepłej wodzie. 4. Przekładamy raki do wywaru winnego i gotujemy ok. 5 min, po czym wyjmujemy i układamy na półmisku w piramidkę. 5. Pozostały wywar gotujemy jeszcze chwilę, dodajemy pieprz cayenne i resztę masła. Ciepły sos serwujemy do raków
